Delicious S'mores Cookies Recipe

Fancy mixing up a bowl of deliciousness? Try making these S'mores Cookies. The ingredients are pretty basic and the instructions are easy to follow.

15 minute preperation time | 40 minute cooking time | serves approximately 16
Ingredients:
¬ 8 digestive biscuits
¬ 1 1/2 cups of plain flour
¬ 2/3 cup of icing sugar
¬ 1/2 a teaspoon of vanilla extract
¬ 1/2 a teaspoon of salt
¬ 1 large egg
¬ 6 ounce of unsalted butter
¬ 1 jar of marshmallow fluff
¬ 1 bar of milk chocolate, broken into pieces
Method:
Step 1: Measure out all of your ingredients so it's easier to simply put them all straight into the bowl to mix. Then you will need to pre-heat the oven to either 350 degrees Fahrenheit or 180 degrees Celsius.
Step 2: Place the biscuits into a re-sealable bag and break them up into a small crumbs using a rolling pin. Then mix them in a bowl with all of the other dry ingredients, including the plain flour, icing sugar and salt.
Step 3: It's now time to mix up the other ingredients. Place the unsalted butter, vanilla extract and egg into a bowl and whisk together using and electronic mixer. Make sure it is on low speed to avoid splattering your kitchen walls! You want this mixture to be creamy.
Step 4: Add the dry ingredients to the butter mix little bits at a time and whisk these together using the mixer, on low again. Continue to repeat this until all of the dry mix is combined with the butter mixture. This should create a doughy mixture that will form the base of your cookies.
Step 5: Line your baking try with greaseproof paper or any preferred alternative. Then pour in 3/4 of the mixture (hold onto the other 1/4, it is going to be used at a later stage) into the baking tray and spread it out so it's even, then you will need to take the back of a spoon to flatten out and firm down the mixture to create the ideal base.
Step 6: Take the broken chocolate pieces and spread them around on top of the cookie mix. After this, using a spoon, drop marshmallow fluff on top of the chocolate pieces and use a fork to help you spread out the marshmallow if necessary. Continue to do this until it seems there's a fair amount of marshmallow on the top (this can be done to preference).
Step 7: Use the remainder cookie mix to cover over the top. Stretch out the cookie mix so that it covers most of the marshmallow and chocolate.
Step 8: Place the baking tray in the pre-heated oven and set yourself a timer for 40 minutes. Make sure you keep checking the oven to ensure it doesn't over cook and burn. Take the cookie out of the oven once they're a golden brown. Leave them on the side to cool down before you cut them up.
Step 9: Cut the cookie up into your preferred size pieces, the average mix makes around 16 pieces. Finally, enjoy taking your first bite out of these delicious cookies.
